Could I ask do you mean colour options for the stars/diamonds or for the dial?
The dial colour can be changed by selecting the colour theme.
I will have to look at the star/diamond colours - that would be quite a big change and would need some thought. The face already has a vast number of options and I will have to think of what to miss out in order to increase the star/diamond colour options.
