Hi Claire, sorry for the late reply.
We've just become aware that this is an issue with the default "date" complication on Apple Watch.
You should be able to simply select the correct date complication ("today's date") from the Watch app on your iPhone.
You can also change it to any other complication you'd prefer from that list :)
