The subdials do indeed do something.
The left subdial is a 'radial moon phase.'
The subdial has a scale from 0 to 29.5 (the length of a synodic month in days) expressed in the numbers 1, 3, 6, and 9. The hand travels slowly along this scale and indicates exactly which day of the lunar cycle (29.5 days) we are on.
The right subdial is a '30-minute subdial.'
Its applications are manifold. It is worth using a search engine to look up what function this subdial can fulfill for you.
The bottom subdial is a 'minute tracker.'
Its function and applications can also be manifold.
Unfortunately, Samsung's WFF protocol does not allow you to create a chronograph that works via the dial with a start/stop and reset button.
I do have real chronographs in my collection (including on Facer), but the chronograph cannot be operated on a Samsung watch with a One UI (user interface) higher than 5.
As a result, subdials primarily serve a decorative function. However, in my case, they are always functional, and you are completely free to come up with a function and/or purpose for them yourself.
